Sorry if this is answered elsewhere, but I can't find it.
My troops are doing well working toward becoming Sergeants, however I can't find out if it's just for show. Does rank make a difference in combat? Will my Pikemen graduate to Elite Pikemen? Will my footknights become Templar?

The stripes will give better performance to your troops but they will not upgrade the troop type. How much better is a question for a more experienced warrior than I.

In other words, your foot knights won't become templars but they will be the best foot knights in the battle.

At least, I think that is the case

It probably is, but in my experience I haven't noted a large improvement. Unless everything else in the battle is evenly matched, it isn't worth a great deal. They still are lost just as easily, and enemy units don't target the units with fewer stripes first. I personally have given up worrying about it.
